BUSS UP SHUT is a flaky fried bread forcibly removed from the Indian subcontinent when the British brought its' inhabitants to the Caribbean to work the fields left untilled by recently freed enslaved Africans. Paratha as it is known in South Asia became buss up shut in Trinidad, when the bread was broken (burst) into many pieces. The finished product resembled a "burst up shirt", hence its' new name!
